Italian Delight: Penne Arabiata Pasta Recipie

We last left our Tasty Treats section with Strawberry Trifle. We continue our journey and this week we will be visiting one of the most eaten Italian delicacy, The Pasta. It’s a very simple dish to prepare and it will just taste like the pasta at your favorite restaurant once you get the ingredients and their quantity correct. It takes around 30-40 minutes to cook, so it’s not very time consuming.

Ingredients

  • 3 table spoon olive oil
  • 400g dried penne pasta
  • 1 brown onion, finely chopped
  • 2 small red chillies, chopped and crushed
  • 1 garlic clove, crushed or paste
  • Tomatoes
  • 2 teaspoons sugar
  • 1/2 cup diced and cook vegetables (as per your choice)
  • 1/2 cup small chopped  basil leaves
  • Oregano
  • Salt
  • Tomato puree

Step1:  Boil Penne in water and add salt and a teaspoon of oil till the mixture gets cooked.  Drain the excess water and keep the mixture to cool down.

Step 2: Blanch the tomatoes and remove the seeds. Take a pan, heat one and a half spoon of olive oil along with garlic and sauté it for half a minute. Then add chili flakes and continue to sauté, then add onions till then turn soft and translucent. Then add tomato puree and mix.

Step 3: Add Oregano and them cook for 2-3 minutes till the entire mixture gets a saucy consistency.

Step 4: Take another pan and heat the remaining olive oil and add one portion of penne and mix. Add the required amount of sauce and continue to toss the mixture.

Take care not to use a spoon or any cutlery which will cause the penne to break. Serve it hot with a portion of garlic bread. So, the next time you can surprise your family and friends with your own self made Penne Arrabiata Pasta.
